A rare Masamoto Sohonten 正本総本店 honyaki takohiki, 270mm blade length, believed to be new old stock from the 1990s.

This traditional Japanese single-bevel knife is a Tokyo/Kanto-style takohiki, historically associated with sashimi preparation and precise slicing of octopus, fish and delicate proteins. The knife features a carbon steel honyaki blade, traditional wa-handle with black ferrule, and original Masamoto box.

The box is marked 本焼 / 刺身 / 270mm, confirming the honyaki sashimi category and blade length.

Description

This Masamoto Sohonten honyaki takohiki is a traditional Japanese single-bevel slicing knife associated with Tokyo/Kanto-style sashimi preparation.

At 270mm, it offers excellent control for sashimi, sushi work and precise slicing of octopus, fish and delicate proteins. Compared with a yanagiba, the takohiki has a straighter profile and a more squared-off tip, giving it a distinctive traditional appearance and controlled pull-cutting feel.

The knife is believed to be new old stock from the 1990s. It appears unused and is supplied with its original Masamoto box. The box is marked 本焼 / 刺身 / 270mm, identifying the knife as a honyaki sashimi knife.

Honyaki knives are forged from a single piece of high-carbon steel and are generally considered among the most demanding and prestigious forms of traditional Japanese knife making. They are valued for their hardness, cutting feel, sharpening response and traditional craftsmanship.

Care instructions

This is a carbon steel honyaki knife, not stainless steel.

To preserve the blade:

  • Dry immediately after use
  • Do not leave wet or dirty
  • Do not wash in dishwasher
  • Avoid acidic foods sitting on the blade
  • Apply a light coat of camellia oil before storage
  • Sharpen only with appropriate Japanese whetstones
  • Handle carefully: honyaki blades are hard and can be more brittle than softer laminated knives

A natural patina may develop with use. This is normal for carbon steel.
