This Masamoto Sohonten CT5027 gyuto is a professional Western-style Japanese chef knife designed for general kitchen work.

Care instructions
This is a high-carbon steel knife, not stainless steel.
To preserve the blade:
- Dry immediately after use

- Apply a light coat of camellia oil if storing for extended periods
- Sharpen with Japanese whetstones
A natural patina may develop with use. This is normal for carbon steel and can help protect the blade over time.
